two crossover cables?
How do you connect two crossover cables using a RJ45 butt-connector? Or, do you use one crossover and one patch?

yep
Think of it this way: if you connect two crossover cables, the two crossed wires will effectively "cancel" each other and you will have simply built a complicated straight through cable.
However if you connect 3 crossover cables, you will have made a crossover cable.
