The ECS website gives the following list of supported Athlon64 processors.Id suggest going with the highest processor your budget will allow and giving you some limited future proofing.
AMD Athlon 64 3700+ (Rev.CG) 2400 MHz (1MB,1600,Socket 754) YES
AMD Athlon 64 3400+ (Rev.CG) 2400 MHz (512KB,1600,Socket 754) YES
AMD Athlon 64 3400+ (Rev.C0) 2200 MHz (1MB,1600,Socket 754) YES
AMD Athlon 64 3200+ (Rev.CG) 2200 MHz (512KB,1600,Socket 754) YES
AMD Athlon 64 3000+ (Rev.E) 2000 MHz (512KB,1600,Socket 754) YES
AMD Athlon 64 3000+ (Rev.C0) 2000 MHz (512KB,1600,Socket 754) YES
AMD Athlon 64 2800+ (Rev.CG)

ECS C51G-M754 is a socket 754 motherboard.
May be rough to find a cpu for it.
Here is a list of what they made in 754
http://users.erols.com/chare/current_cpus.htm
May be best to update the mobo and get a better cpu for it.

Ditto what Train says about updating. I think the only place to find a Socket 754 Athlon ATM is eBay, and they're fetching $100 or better at the moment for the 3700. Going any less on the CPU wouldn't be worth the trouble of swapping them out, IMHO.
