Best way to back up user files?
I want the data files from a customer's win 7 installation and that's all, but it's important that I don't miss any. I don't know if he used the default locations, does that mean I'll have to search the whole drive for every extension type one by one? Is there a tool?

There are many third party file search utilities. Some examples...

Just make sure you specifically look for all the ones you want and don't omit somewhat less
common ones like jpeg , .jfif , .gif , .pjp, .png, .bmp. pdf, .doc, .xlsx, .xls, etc etc
VirtualDr email notices are not working.

Your best option if you do not want to miss some data is to back up EVERYTHING. If they are getting a new system with a decent size storage drive, a compressed image backup with a utility that can extract files from that, stored on their new drive, or 2 inexpensive flash drives, would be the way to go.
