In Windows XP i could remove all the Restore Setting's except the last one.

Vista doesn't appear to have the options...probably due to drives being so large and inexpensive...
As a temp messue you can turn it off - which will zap all restore points...then create a new one manually.

Actually, Vista does have that option. Right-click the Vista partition in Windows Explorer and choose Properties. Click "Disk Cleanup" then choose the "Files from all users on this computer" option:

Then allow it to run when UAC asks, and go to the More Options tab, and click "Clean Up" in the "System Restore and shadow copies" section:
