Audacity can record almost anything played on a computer including streams. It's very high quality free software used by nearly every recording studio in the world and plenty of amateurs as well. Perhaps a bit of a learning curve but it is the best.

I use AIMP for my audio, both on my PC and Android phone. Have used it to record some good interviews in the past. Just press on the record button and you're off.
I also have Audacity, but I wouldn't have the audacity to challenge Fink on anything audio.
