Between those two choices, definitely get the i5 with 8GB.
Like I said before, the XPS build quality is better, so you're paying for that (eg. metal vs plastic case). The SSD adds to the cost too,...

The i5-7200U has a higher max speed and I'm assuming it's the system with the 8GB RAM, so it would be obviously better. You didn't list any prices.

128GB is pretty small to me. I'd get at least a 240-256GB SSD, since it's the only drive in the laptop. 128 would be ok as a boot drive in a desktop, if you have a second drive for data.

The XPS series has more metal case parts that plastic, so the build quality seems better. You really need to look at the actual specs like CPU and RAM. I think most XPS builds have SSDs now.
