when I'm sending a message how can I remove the
From: that contains my e-mail address
This is right above the
To:
It hasn't always been like that.
In my taskbar at the bottom of my screen where my time is, when I receive new mail an envelope will appear in the task bar. How can I make that not do that?

1. Tools->Accounts->Properties->General Tab-> the "Name" field is what appears in the from box.
2. Not sure.

You can change your identity within limits, but I think under present ISP/Net protocol you cannot totally mask your addy as a sender.

Removing the From Address Field on the screen where you send your email doesn't remove your email address as the identity from which you are sending an email. In Outlook Express, you can't take it off unless you delete the other accounts you have on your profile. It's there so you can select which account you want to send from. Your Default account will be the one automatically selected.
Also, in Outlook Express you can't deselect message notification, but you can deselect automatic send/receive from the 'Tools', 'Options'. Then just manually click the Send/Receive when you want to check for messages.
The full version of Outlook ie (Outlook 2000) has the ability to turn off the message notification.

The FROM field in new mail messages generally relates to Outlook 2000 rather than Outlook Express.. is it Express that you are running?
To remove this field in Outlook 2000
Open a new mail message and then go to:
View
Remove the Tick from the FROM FIELD
This feature is handy if you have delegate ownership of someone elses mailbox [ie: Secretary to Manager type of scenario] and that person doesn't want to type their own emails, but wants the message to come from them.
