Whenever I restart the Internet Mail service I get a warining for Event ID 3040: Unable to resolve a delivery route. The route lists smtp.dial.pipex.com (our outgoing mail host) as the target host, but the address for smtp.dial.pipex.com could not be resolved.
I don't know where it's picking this up from, I've checked with our ISP and it is the right address - have I done something fundamentally wrong?
I can't send mail, it doesn't want to know.
All advice glady received.

It all depends on whether you are permanently connected or dialing out.
If you dial out, the error message is usual because there is no way for Exchange to contact a DNS server to translate the name to an address when it starts up. Ignore it or, if it bothers you, put in the ip address instead of the name.
If you are permanently connected it's a different ball-game and we need a lot more information. Please post back with more details.

To avoid the error, put the host name in as an IP address. This isn't perfect - if your ISP changes the IP address, your stuffed. However, I've had mine like that for years and it works fine.
